It contains chapters about the siting of apiaries, treatment of bee hives, the management system, honey extraction, bee health, certification, conversion, trading with bought-in produce and Demeter hive product identification. In three appendices, requirements concerning the measurable quality of honey, a positive list of substances and treatments, and provisions concerning containers to be used, decanting and heating are indicated. The International Demeter Standards for the certification of Demeter beekeeping is valid explicitely in addition to the legal regulations of the respective countries (in particular the EEC reg. 2092/91 of Europe, the NOP standard (USA) and the Australian National Standards for Organic and Biodynamic Production.
